Cranberry Chicken Bake
Sounds a little weird at first, but don’t worry, the finished product actually tastes nothing like ketchup!
6 boneless skinless chicken breast halves
½ c. chopped onion
1 Tbs. oil
1 c. ketchup
½ c. firmly packed brown sugar
½ tsp grated orange peel
1½ c. fresh or frozen cranberries
Heat oven to 400. Bake chicken in greased 13x9 (3 qt) baking dish at 400 for 25 minutes. Meanwhile, in medium skillet, cook onion in hot oil till crisp-tender. Add ketchup, brown sugar, and orange peel; blend till sugar dissolves. Stir in cranberries. Spoon over partially baked chicken breasts. Bake an additional 20 min. or till chicken is tender and done.
Good with rice pilaf.
